Phở Bò — Vietnamese Beef Noodle Soup

A clear, fragrant beef broth over soft rice noodles — Vietnam's most iconic dish. This kit gives you all the pantry essentials. You provide the fresh beef and herbs, and follow along with our recipe and video.

In this kit (pantry items):

  • Dried rice noodles (bánh phở)
  • Phở spice / broth base
  • Fish sauce
  • Rock sugar

You'll need to add (fresh — buy separately):

  • Beef bones and beef brisket or sliced raw beef
  • Onion and ginger (for charring the broth)
  • Fresh herbs: Thai basil, coriander, spring onion
  • Bean sprouts, lime, fresh chilli
  • (optional) Hoisin sauce and chilli sauce to serve

Method:

  1. Char the onion and ginger over an open flame until fragrant, then rinse.
  2. Bring beef bones to the boil, skim the foam, then simmer with the charred aromatics and the phở spice for at least 2 hours.
  3. Season the broth with fish sauce and rock sugar to taste.
  4. Soak and cook the rice noodles per packet instructions, then drain.
  5. Place noodles and raw sliced beef in a bowl, ladle over the boiling broth to cook the beef.
  6. Serve with fresh herbs, bean sprouts, lime and chilli on the side.
